Ingredients

  • Small potatoes
  • Cheddar cheese
  • Bacon
  • Green onions
  • Sour cream (optional)
  • Olive oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Wash and scrub the small potatoes, then pierce them a few times with a fork.
  3. Place the potatoes on a baking sheet and bake for about 20 minutes, or until tender.
  4. Remove the potatoes from the oven and let them cool slightly.
  5. Carefully cut each potato in half and scoop out some of the insides, leaving a thin layer around the edges.
  6. Brush the potato skins with olive oil, then sprinkle with salt and pepper.
  7. Add shredded cheddar cheese and crumbled bacon to each half.
  8. Return the loaded skins to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
  9. Remove from the oven and garnish with chopped green onions and a dollop of sour cream if desired.
