Ingredients
- Small potatoes
- Cheddar cheese
- Bacon
- Green onions
- Sour cream (optional)
- Olive oil
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and scrub the small potatoes, then pierce them a few times with a fork.
- Place the potatoes on a baking sheet and bake for about 20 minutes, or until tender.
- Remove the potatoes from the oven and let them cool slightly.
- Carefully cut each potato in half and scoop out some of the insides, leaving a thin layer around the edges.
- Brush the potato skins with olive oil, then sprinkle with salt and pepper.
- Add shredded cheddar cheese and crumbled bacon to each half.
- Return the loaded skins to the oven and bake for an additional 10 minutes, or until the cheese is bubbly and golden.
- Remove from the oven and garnish with chopped green onions and a dollop of sour cream if desired.
