- 2 cups fresh spinach (or kale/Swiss chard)
Instructions
- Prepare the chicken: Season your chicken breasts with salt and pepper and place them in the bottom of your crockpot.
- Mix the sauce: In a bowl, combine cream cheese, chicken broth, minced garlic, and Italian seasoning. Stir until well mixed.
- Pour it on: Pour the creamy mixture over the chicken in the crockpot, spreading it evenly.
- Cook: Cover and set your crockpot to low for 6 hours or high for 3 hours. You’ll want to check it halfway through.
- Add spinach and cheese: In the last 15 minutes of cooking, add fresh spinach and grated Parmesan cheese. Stir gently just until wilted.
