Description

A cozy and nourishing soup featuring tender chicken, wild rice, and vibrant vegetables, perfect for chilly evenings.

Ingredients

Scale
  • 1 lb Boneless, Skinless Chicken Breasts
  • 1 cup Wild Rice
  • 2 Carrots, diced
  • 2 Celery stalks, diced
  • 1 Onion, diced
  • 2 cloves Garlic, minced
  • 6 cups Low-Sodium Chicken Broth
  • 1 tsp Thyme
  • 1 tsp Rosemary
  • 1/2 tsp Black Pepper
  • 1/2 cup Heavy Cream (optional)

Instructions

  1. Prepare your chicken: Place the boneless, skinless chicken breasts at the bottom of the crockpot.
  2. Add vegetables: Layer the diced onions, carrots, and celery on top of the chicken.
  3. Mix in rice and seasonings: Sprinkle the wild rice over the vegetables and add garlic, thyme, rosemary, and pepper.
  4. Pour in the broth: Add the low-sodium chicken broth, ensuring the rice is submerged.
  5. Cook: Cover and set your crockpot on low for 6-8 hours or high for 4 hours.
  6. Finish the soup: In the last 30 minutes of cooking, shred the chicken directly in the pot using two forks. Stir in the heavy cream if desired.

Notes

For a vegetarian option, substitute chicken with chickpeas and use vegetable broth.
