- 1 cup Corn
- 1 can Diced Tomatoes

- 2 tbsp Taco Seasoning
Instructions
- Prep the ingredients by chopping the bell peppers and gathering all ingredients.
- Layer in the crock pot starting with the chicken at the bottom, then add the black beans, corn, diced tomatoes, and bell peppers.
- Add seasoning by sprinkling the taco seasoning evenly over the ingredients.
- Mix the ingredients gently to ensure the chicken is well-coated with seasoning.
- Cook on low for 4-6 hours or on high for 2-4 hours.
- Shred the chicken about 30 minutes before serving using two forks to soak in the flavors.
Notes
Substitute chicken with turkey or a plant-based protein for a vegetarian option. Add jalapeños for heat.
