Ingredients

  • 2 medium-sized Zucchini
  • 1 cup Parmesan Cheese, grated
  • 1 cup Breadcrumbs
  • 2 Eggs
  • 2 tablespoons Olive Oil
  • Salt, to taste
  • Black Pepper, to taste
  • Optional seasonings: garlic powder, oregano

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice the zucchini into ½-inch thick rounds and place them in a mixing bowl.
  3. In another bowl, beat the eggs and season them with salt and pepper.
  4. In a separate dish, combine breadcrumbs and grated parmesan cheese.
  5. Dip each zucchini slice into the egg mixture, letting excess drip off, then coat in the breadcrumb mixture.
  6. Place the coated zucchini on a baking sheet lined with parchment paper.
  7. Drizzle olive oil over the zucchini slices for that golden finish.
  8. Bake for about 25 minutes or until golden and crispy, turning once halfway through.

Notes

For a vegan option, substitute parmesan cheese with nutritional yeast and use flaxseed meal instead of eggs. Try to cut zucchini slices uniformly for even cooking.
