- 2 medium-sized Zucchini
- 1 cup Parmesan Cheese, grated
- 1 cup Breadcrumbs
- 2 Eggs
- 2 tablespoons Olive Oil

Instructions
- Preheat your oven to 425°F (220°C).
- Slice the zucchini into ½-inch thick rounds and place them in a mixing bowl.
- In another bowl, beat the eggs and season them with salt and pepper.
- In a separate dish, combine breadcrumbs and grated parmesan cheese.
- Dip each zucchini slice into the egg mixture, letting excess drip off, then coat in the breadcrumb mixture.
- Place the coated zucchini on a baking sheet lined with parchment paper.
- Drizzle olive oil over the zucchini slices for that golden finish.
- Bake for about 25 minutes or until golden and crispy, turning once halfway through.
- Enjoy while warm with your favorite dipping sauce!
Notes
For a vegan option, substitute parmesan cheese with nutritional yeast and use flaxseed meal instead of eggs. Try to cut zucchini slices uniformly for even cooking.
