- 4 Chicken Breasts
- 2 cups Fresh Spinach
- 1 cup Heavy Cream
- 4 Garlic cloves, minced
- 1/2 cup Parmesan Cheese
- 2 tbsp Olive Oil
- Salt and Pepper to taste
Instructions
- Prepare the chicken by seasoning with salt and pepper on both sides.
- Sauté the chicken in olive oil over medium heat for 6-7 minutes per side.
- Add garlic to the pan and sauté for 1 minute.
- Make the sauce by pouring in heavy cream and stirring in Parmesan cheese until smooth.
- Incorporate the spinach and stir until wilted.
- Combine the chicken back into the skillet, spooning sauce over it, and simmer for 2-3 minutes.
- Serve warm, and enjoy!
Notes
For a dairy-free option, substitute heavy cream with coconut cream and Parmesan with nutritional yeast. Don’t overcook the chicken for best results.
