- 1 cup Orzo Pasta
- 1 lb Shrimp, peeled and deveined
- 3 cloves Garlic, minced
- 4 oz Cream Cheese
- 2 cups Chicken Broth
- 2 cups Spinach
- 1/2 cup Parmesan Cheese, grated
Instructions
- Bring a pot of salted water to a boil. Add the orzo and cook according to package instructions until al dente.
- While the pasta cooks, heat a large skillet over medium heat and add a splash of olive oil.
- Sauté minced garlic until fragrant, about 1 minute.
- Toss in the shrimp and let them cook until they turn pink, approximately 3-4 minutes.
- Add the cooked orzo to the skillet along with the chicken broth and cream cheese. Stir until well combined.
- Gently fold in fresh spinach until wilted, then sprinkle with parmesan cheese.
- Give it a final stir, adjust seasoning as needed, and serve hot!
