Ingredients

- 2 medium Zucchini, sliced into rounds
- 1 cup Parmesan Cheese, grated
- 4 oz Cream Cheese
- 1 tsp Garlic Powder
- Salt, to taste
- Pepper, to taste
- 2 tbsp Olive Oil
Instructions
- Preheat your oven to 400°F (200°C).
- Slice the zucchini into rounds about ½ inch thick.
- In a large mixing bowl, combine the olive oil, garlic powder, salt, and pepper. Toss the zucchini rounds in this mixture until well coated.
- Arrange the zucchini in a single layer on a baking sheet. Bake for about 15 minutes or until they are just beginning to soften.
- Remove from the oven and spread cream cheese over the top of each zucchini round.
- Sprinkle generously with Parmesan cheese.
- Return to the oven and bake for another 10 minutes, allowing the cheese to melt and turn golden.
- Once done, let it cool for a few minutes before serving.
Notes
For a lighter option, replace cream cheese with a dairy-free alternative. Adding Italian herbs can enhance flavor.
