Ingredients

  • 2 medium Zucchini, sliced into rounds
  • 1 cup Parmesan Cheese, grated
  • 4 oz Cream Cheese
  • 1 tsp Garlic Powder
  • Salt, to taste
  • Pepper, to taste
  • 2 tbsp Olive Oil

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Slice the zucchini into rounds about ½ inch thick.
  3. In a large mixing bowl, combine the olive oil, garlic powder, salt, and pepper. Toss the zucchini rounds in this mixture until well coated.
  4. Arrange the zucchini in a single layer on a baking sheet. Bake for about 15 minutes or until they are just beginning to soften.
  5. Remove from the oven and spread cream cheese over the top of each zucchini round.
  6. Sprinkle generously with Parmesan cheese.
  7. Return to the oven and bake for another 10 minutes, allowing the cheese to melt and turn golden.
  8. Once done, let it cool for a few minutes before serving.

Notes

For a lighter option, replace cream cheese with a dairy-free alternative. Adding Italian herbs can enhance flavor.
