- 2 pounds boneless, skinless chicken thighs or breasts, cooked and shredded
- 2 tablespoons olive oil
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 8 ounces mushrooms, sliced (optional)
- 1 cup cauliflower florets, steamed and roughly chopped
- 1 cup heavy cream
- 4 ounces cream cheese, softened
- 1/2 cup grated Parmesan cheese
- 1 teaspoon Dijon mustard
- 1 teaspoon dried thyme or 1 tablespoon fresh thyme leaves
- Salt and freshly ground black pepper to taste
- 1/2 cup crushed pork rinds or almond flour
- Fresh parsley, chopped, for garnish
Instructions
- Preheat your oven to 375°F (190°C) and grease a 9×13 baking dish.
- Heat olive oil in a large skillet over medium heat, then add onion and sauté until translucent, about 4 minutes.
- Add garlic and mushrooms and cook until they release their juices.
- Stir in steamed cauliflower and shredded chicken; sprinkle thyme, salt, and pepper and mix to combine.
- Lower heat and add cream, cream cheese, and Dijon mustard, stirring until the cream cheese melts into a silky sauce.
- Fold in Parmesan and adjust seasoning, ensuring the sauce coats the back of a spoon.
- Pour the mixture into the prepared baking dish and sprinkle crushed pork rinds or almond flour on top.
- Bake for 20–25 minutes until bubbling and the topping is golden.
- Let rest for 5 minutes before serving.
Notes
For a spicier kick, consider adding smoked paprika or cayenne. This casserole pairs well with a variety of sides.
