- 1 lb Chicken breast (diced)
- 1 Onion (chopped)
- 3 cloves Garlic (minced)
- 1 Bell pepper (diced)
- 1 can Canned diced tomatoes (with green chilies)
- 4 cups Chicken broth
- 1 cup Heavy cream
- 1 cup Tortilla strips (for topping)
- Seasonings (cumin, chili powder, salt, and pepper)
Instructions
- Heat some oil in a large pot over medium heat and sauté the chopped onion, bell pepper, and minced garlic until the onion is translucent.
- Add the diced chicken breast into the pot and cook, stirring occasionally, until the chicken is no longer pink.
- Stir in the canned diced tomatoes, chicken broth, and seasonings. Bring the mixture to a simmer, allowing the flavors to meld.
- Reduce heat and slowly pour in the heavy cream, stirring until well combined.
- Allow the soup to simmer for another 5 minutes.
- Serve hot, garnished with crispy tortilla strips for that perfect crunch.
Notes
For extras, add crushed tortilla chips instead of strips, or include corn and black beans for added nutrition.
