Ingredients

  • 1 lb Chicken breast (diced)
  • 1 Onion (chopped)
  • 3 cloves Garlic (minced)
  • 1 Bell pepper (diced)
  • 1 can Canned diced tomatoes (with green chilies)
  • 4 cups Chicken broth
  • 1 cup Heavy cream
  • 1 cup Tortilla strips (for topping)
  • Seasonings (cumin, chili powder, salt, and pepper)

Instructions

  1. Heat some oil in a large pot over medium heat and sauté the chopped onion, bell pepper, and minced garlic until the onion is translucent.
  2. Add the diced chicken breast into the pot and cook, stirring occasionally, until the chicken is no longer pink.
  3. Stir in the canned diced tomatoes, chicken broth, and seasonings. Bring the mixture to a simmer, allowing the flavors to meld.
  4. Reduce heat and slowly pour in the heavy cream, stirring until well combined.
  5. Allow the soup to simmer for another 5 minutes.
  6. Serve hot, garnished with crispy tortilla strips for that perfect crunch.

Notes

For extras, add crushed tortilla chips instead of strips, or include corn and black beans for added nutrition.
