- 4 cups diced potatoes – russet or Yukon Gold
- 1 cup cream of chicken soup
- 1 cup sour cream
- 1 cup shredded cheddar cheese
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Optional: mixed vegetables (like peas and carrots)
Instructions
- Preheat your oven to 350°F (175°C).
- Combine the cooked chicken, diced potatoes, cream of chicken soup, sour cream, half of the cheddar cheese, garlic powder, salt, and pepper in a large bowl.
- Transfer the mixture into a greased 9×13 inch baking dish and spread it out evenly.
- Top with the remaining cheddar cheese, sprinkling it over the entire dish.
- Cover the dish with aluminum foil and bake for 30 minutes.
- Remove the foil and bake for an additional 15 minutes, until the cheese is bubbling and golden brown.
- Let the casserole rest for about 5 minutes before serving.
