Ingredients
Scale
- 2 boneless, skinless chicken breasts
- 1 cup all-purpose flour
- 2 large eggs
- 4 tablespoons butter
- 2 cloves garlic, minced
- 1 cup low-sodium chicken broth
- 1 cup heavy cream
- 2 tablespoons lemon juice
- 1 teaspoon lemon zest
- 2 tablespoons freshly chopped parsley
Instructions
- Pat the chicken breasts dry and season with salt and pepper.
- Dredge each breast in flour, shaking off the excess.
- Whisk the eggs in a bowl until well blended.
- Heat a large skillet over medium heat and add butter.
- Dip each chicken breast in the egg mixture, then back to the flour for coating.
- Cook the chicken in the skillet for 4-5 minutes on each side until golden brown and cooked through.
- Remove the chicken and let it rest on a plate.
- Add more butter to the skillet, followed by minced garlic, and sauté until fragrant.
- Pour in chicken broth and bring it to a simmer, scraping up any bits stuck to the bottom.
- Stir in heavy cream, lemon juice, and zest; let it reduce until the sauce thickens.
- Return the chicken to the pan to absorb the sauce before serving.
Notes
For a healthier option, consider using boneless turkey or coconut milk instead of heavy cream.
