  • 1 pound chicken breast, boneless and skinless
  • 2 cups broccoli florets
  • 1/2 cup unsalted butter
  • 4 cloves garlic, minced
  • Zest and juice of 1 lemon
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Cook the pasta: In a large pot, bring water to a boil. Add a generous pinch of salt before adding the bowtie pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.
  2. Prepare the chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and paprika. In a large skillet over medium heat, melt 1/4 cup of butter. Add the chicken and cook for about 6-7 minutes on each side until golden and cooked through. Remove from the skillet and let rest on a plate.
  3. Sauté the broccoli: In the same skillet, add at least 1 cup of broccoli florets and sauté for 3-5 minutes.
  4. Make the cowboy butter sauce: Lower the heat and add the remaining butter to the skillet. Once melted, add minced garlic and sauté for a minute until fragrant.
  5. Combine: Add the cooked pasta, lemon juice, and zest to the skillet. Toss in your chicken and broccoli and mix well.
  6. Heat through: Cook for another 2-3 minutes, allowing all the ingredients to mingle and the sauce to thicken.
  7. Serve: Garnish with fresh parsley before serving, and enjoy the explosion of flavors.
