- 8 ounces bowtie pasta
- 1 pound chicken breast, boneless and skinless
- 2 cups broccoli florets
- 1/2 cup unsalted butter
- 4 cloves garlic, minced
- Zest and juice of 1 lemon
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Cook the pasta: In a large pot, bring water to a boil. Add a generous pinch of salt before adding the bowtie pasta. Cook according to package instructions until al dente, usually about 8-10 minutes.
- Prepare the chicken: While the pasta cooks, season the chicken breasts with salt, pepper, and paprika. In a large skillet over medium heat, melt 1/4 cup of butter. Add the chicken and cook for about 6-7 minutes on each side until golden and cooked through. Remove from the skillet and let rest on a plate.
- Sauté the broccoli: In the same skillet, add at least 1 cup of broccoli florets and sauté for 3-5 minutes.
- Make the cowboy butter sauce: Lower the heat and add the remaining butter to the skillet. Once melted, add minced garlic and sauté for a minute until fragrant.
- Combine: Add the cooked pasta, lemon juice, and zest to the skillet. Toss in your chicken and broccoli and mix well.
- Heat through: Cook for another 2-3 minutes, allowing all the ingredients to mingle and the sauce to thicken.
- Serve: Garnish with fresh parsley before serving, and enjoy the explosion of flavors.
