  • ½ cup unsweetened shredded coconut
  • 1 cup buttermilk
  • ¾ cup vegetable oil
  • 4 large eggs
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • ½ teaspoon salt
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
  2. Mix the all-purpose flour, granulated sugar, shredded coconut, baking powder, baking soda, and salt together.
  3. Combine the buttermilk, vegetable oil, eggs, and vanilla extract in a separate bowl and whisk until blended.
  4. Combine the wet ingredients into the dry ingredients using a spatula until just mixed.
  5. Bake the batter in prepared pans for 25-30 minutes, or until a toothpick comes out clean.
  6. Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
  7. Frosting is optional; consider adding a light frosting or serving with whipped cream and fresh fruits.

Notes

For a healthier version, substitute half of the all-purpose flour with whole wheat flour. Add seasonal fruits for a fresh twist.
