Instructions
- Preheat the oven to 350°F (175°C) and grease and flour two 9-inch round cake pans.
- Mix the all-purpose flour, granulated sugar, shredded coconut, baking powder, baking soda, and salt together.
- Combine the buttermilk, vegetable oil, eggs, and vanilla extract in a separate bowl and whisk until blended.
- Combine the wet ingredients into the dry ingredients using a spatula until just mixed.
- Bake the batter in prepared pans for 25-30 minutes, or until a toothpick comes out clean.
- Cool the cakes in the pans for 10 minutes before transferring to wire racks to cool completely.
- Frosting is optional; consider adding a light frosting or serving with whipped cream and fresh fruits.
Notes
For a healthier version, substitute half of the all-purpose flour with whole wheat flour. Add seasonal fruits for a fresh twist.
