Description

A comforting classic meatloaf filled with juicy flavor and a glossy ketchup glaze, perfect for busy weeknights and family gatherings.


Ingredients

  • 1 1/2 pounds ground beef (85 percent lean)
  • 1 cup fresh breadcrumbs
  • 1 large egg
  • 1/2 cup whole milk
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tablespoons Worcestershire sauce
  • 1 tablespoon Dijon mustard
  • 1/2 cup ketchup, plus 2 tablespoons for glaze
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme or 1 tablespoon fresh parsley

Instructions

  1. Preheat oven to 375°F (190°C) and line a loaf pan with parchment.
  2. Melt butter or olive oil in a skillet over medium heat and sauté onion until translucent, about 5 minutes; add garlic for the last 30 seconds.
  3. Combine ground beef, breadcrumbs, sautéed onions and garlic, egg, milk, Worcestershire sauce, mustard, 1/2 cup ketchup, thyme, salt, and pepper in a large bowl. Mix gently until just combined.
  4. Shape the mixture into a loaf that fits your pan and smooth the top with a spatula.
  5. Combine 2 tablespoons ketchup with a teaspoon of brown sugar or honey and brush it over the top for glaze.
  6. Bake uncovered for 55 to 65 minutes until the center reads 160°F (71°C).
  7. Rest the meatloaf for 10 minutes before slicing.

Notes

For a healthier option, substitute ground turkey and use almond milk.
