- 1 1/2 pounds ground beef (85 percent lean)
- 1 cup fresh breadcrumbs
- 1 large egg
- 1/2 cup whole milk
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tablespoons Worcestershire sauce
- 1 tablespoon Dijon mustard
- 1/2 cup ketchup, plus 2 tablespoons for glaze
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme or 1 tablespoon fresh parsley
Instructions
- Preheat oven to 375°F (190°C) and line a loaf pan with parchment.
- Melt butter or olive oil in a skillet over medium heat and sauté onion until translucent, about 5 minutes; add garlic for the last 30 seconds.
- Combine ground beef, breadcrumbs, sautéed onions and garlic, egg, milk, Worcestershire sauce, mustard, 1/2 cup ketchup, thyme, salt, and pepper in a large bowl. Mix gently until just combined.
- Shape the mixture into a loaf that fits your pan and smooth the top with a spatula.
- Combine 2 tablespoons ketchup with a teaspoon of brown sugar or honey and brush it over the top for glaze.
- Bake uncovered for 55 to 65 minutes until the center reads 160°F (71°C).
- Rest the meatloaf for 10 minutes before slicing.
Notes
For a healthier option, substitute ground turkey and use almond milk.
