Instructions

  1. Preheat your oven to 350°F (175°C) and line a cupcake pan with cupcake liners.
  2. Mix dry ingredients: In a large bowl, whisk together flour, cocoa powder, baking powder, baking soda, sugar, and salt until well combined.
  3. Combine wet ingredients: In another bowl, mix eggs, milk, vegetable oil, and brewed coffee until smooth.
  4. Combine mixtures: Gradually add the wet mixture to the dry ingredients, stirring until just combined. Don’t overmix; it’s okay if there are a few lumps.
  5. Fill cups: Pour the batter into each cupcake liner, filling them about 2/3 full.
  6. Bake: Place the pan in the preheated oven and bake for 18-20 minutes, or until a toothpick inserted in the center comes out clean.
  7. Cool: Allow them to cool in the pan for about 5 minutes before transferring them to a wire rack to cool completely.

Notes

For a dairy-free option, substitute regular milk with almond milk. You can freeze these cupcakes; just wrap them individually before freezing.
