- 1 can Chickpeas, drained and rinsed
- 2 ripe Avocados, diced
- 1/2 cup Feta Cheese, crumbled
- 1 medium Cucumber, diced
- A handful of Cherry Tomatoes, halved
- 1/4 Red Onion, finely chopped
- Juice of 1 Lemon, freshly squeezed
- 1 tablespoon Olive Oil
- Salt and Pepper, to taste
Instructions
- Combine the drained and rinsed chickpeas in a large bowl.
- Toss in the diced avocados, cucumber, cherry tomatoes, and red onion.
- Whisk together lemon juice, olive oil, salt, and pepper in a small bowl for the dressing.
- Drizzle the dressing over the salad mixture and gently toss everything together.
- Sprinkle the crumbled feta over the top before serving.
Notes
For added greens, consider mixing in some spinach or arugula. This salad can also be made vegan by omitting the feta.
