Ingredients

  • 1 cup Chickpeas, cooked
  • 2 medium Beets, roasted
  • ½ cup Feta Cheese, crumbled
  • 4 cups Fresh Greens (Spinach or Arugula)
  • 2 tablespoons Olive Oil
  • 1 tablespoon Lemon Juice
  • Salt, to taste
  • Black Pepper, to taste

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Prepare the beets by washing and wrapping them in foil, then roast for about 20 minutes until tender.
  3. Cook the chickpeas in boiling water for about 5 minutes, then drain and cool slightly.
  4. Combine fresh greens in a large bowl.
  5. Add the diced, cooled beets, cooked chickpeas, and crumbled feta to the greens.
  6. Make the dressing by whisking together the olive oil and lemon juice; season with salt and pepper.
  7. Dress the salad with the prepared dressing and toss gently until well combined.
