Ingredients

- 1 cup Chickpeas, cooked
- 2 medium Beets, roasted
- ½ cup Feta Cheese, crumbled
- 4 cups Fresh Greens (Spinach or Arugula)
- 2 tablespoons Olive Oil
- 1 tablespoon Lemon Juice
- Salt, to taste
- Black Pepper, to taste
Instructions
- Preheat the oven to 400°F (200°C).
- Prepare the beets by washing and wrapping them in foil, then roast for about 20 minutes until tender.
- Cook the chickpeas in boiling water for about 5 minutes, then drain and cool slightly.
- Combine fresh greens in a large bowl.
- Add the diced, cooled beets, cooked chickpeas, and crumbled feta to the greens.
- Make the dressing by whisking together the olive oil and lemon juice; season with salt and pepper.
- Dress the salad with the prepared dressing and toss gently until well combined.
