- 2 Chicken breasts
- 2 tablespoons Olive oil
- 3 cloves Garlic, minced
- 1 cup Heavy cream
- 1 cup Parmesan cheese, freshly grated
- 1 cup Rice, long grain
- 2 cups Chicken broth
- ¼ cup Parsley, chopped
- Salt and pepper to taste
Instructions
- Cook the rice: Rinse the rice under cold water. In a medium pot, combine the rice and chicken broth, bring it to a boil, then reduce to a simmer and cover. Cook according to package instructions.
- Sauté the chicken: While the rice cooks, heat olive oil in a large skillet over medium heat. Season the chicken breast with salt and pepper, and cook until golden brown and cooked through, about 6-8 minutes per side. Remove the chicken and let it rest.
- Prepare the sauce: In the same skillet, add the minced garlic and cook for about 1 minute, until fragrant. Pour in the heavy cream, stirring and scraping up any brown bits from the bottom of the pan.
- Melt the cheese: Add the grated Parmesan cheese to the sauce, whisking until it melts and becomes creamy.
- Combine it all: Slice the cooked chicken and add it back to the skillet. Toss with the creamy sauce. Once the rice is ready, add it directly into the skillet, or serve it alongside.
- Serve: Garnish with freshly chopped parsley.
