Ingredients

  • Fettuccine Pasta
  • Chicken Breast (or thighs)
  • Heavy Cream
  • Parmesan Cheese
  • Garlic, minced
  • Butter
  • Salt and Pepper, to taste

Instructions

  1. Cook the Pasta: Begin by boiling water with a pinch of salt. Add the fettuccine and cook according to package instructions until al dente. Drain and set aside, but keep a cup of pasta water.
  2. Sauté the Chicken: In a large skillet over medium heat, melt a tablespoon of butter. Add your seasoned chicken and cook until golden brown, about 6-7 minutes per side. Remove and let it rest before slicing.
  3. Create the Sauce: In the same skillet, add another tablespoon of butter and minced garlic. Sauté until fragrant. Pour in the heavy cream, stirring to combine.
  4. Add Cheese: Gradually add the parmesan, stirring continuously until it melts and the sauce thickens, around 3-5 minutes. Add reserved pasta water if needed.
  5. Combine: Toss the cooked fettuccine and sliced chicken into the sauce, mixing thoroughly to coat. Season with salt and pepper.
  6. Serve: Plate your creation and finish with extra parmesan and freshly cracked pepper.

Notes

For a lighter version, substitute half of the heavy cream with low-fat milk. You can also make this dish vegetarian by omitting the chicken and adding vegetables.
