- 4 large eggs

- Salt and pepper, to taste
Instructions
- Heat olive oil in a large skillet over medium heat. Add diced potatoes, season with salt and pepper, and cook for about 10-12 minutes until golden brown and crispy.
- Stir in chopped onions and cook for another 2-3 minutes until they are soft.
- Whisk the eggs in a bowl, seasoning with salt and pepper.
- Pour the beaten eggs over the potato-onion mixture and gently stir, cooking for about 3-5 minutes.
- Sprinkle shredded cheese on top, cover the skillet, and allow it to melt.
- Serve hot and enjoy!
