Description

A light, cheesy keto bread that’s fluffy and protein-packed, perfect for breakfast or a quick dinner.


Ingredients

  • 4 large eggs, separated
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan
  • 2 tablespoons cream cheese, softened
  • 1 teaspoon baking powder
  • 1/4 teaspoon garlic powder (optional)
  • 1/4 teaspoon salt, plus extra to taste
  • Freshly cracked black pepper to finish
  • Chopped chives or parsley for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
  2. Separate the eggs into two bowls. In the yolk bowl, add cream cheese, mozzarella, Parmesan, baking powder, garlic powder, and salt. Whisk until smooth.
  3. Beat the egg whites until stiff peaks form.
  4. Gently fold one third of the egg whites into the yolk mixture. Then fold in the remaining whites.
  5. Spoon six mounds onto the prepared sheet, shaping them into small rounds.
  6. Bake for 12–15 minutes until golden on top and set in the center.
  7. Remove from the oven and let cool for a minute. Sprinkle with chives and black pepper, and serve warm.

Notes

For variations, add cooked bacon, fresh herbs, or make sweeter versions with vanilla and cinnamon.
