A light, cheesy keto bread that’s fluffy and protein-packed, perfect for breakfast or a quick dinner.
Ingredients

- 4 large eggs, separated
- 1 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan
- 2 tablespoons cream cheese, softened
- 1 teaspoon baking powder
- 1/4 teaspoon garlic powder (optional)
- 1/4 teaspoon salt, plus extra to taste
- Freshly cracked black pepper to finish
- Chopped chives or parsley for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C) and line a baking sheet with parchment paper.
- Separate the eggs into two bowls. In the yolk bowl, add cream cheese, mozzarella, Parmesan, baking powder, garlic powder, and salt. Whisk until smooth.
- Beat the egg whites until stiff peaks form.
- Gently fold one third of the egg whites into the yolk mixture. Then fold in the remaining whites.
- Spoon six mounds onto the prepared sheet, shaping them into small rounds.
- Bake for 12–15 minutes until golden on top and set in the center.
- Remove from the oven and let cool for a minute. Sprinkle with chives and black pepper, and serve warm.
Notes
For variations, add cooked bacon, fresh herbs, or make sweeter versions with vanilla and cinnamon.
