Description
A delightful blend of Buffalo chicken and traditional birria flavors, perfect for family gatherings or weeknight dinners.
Ingredients
Scale
- 2 lbs chicken thighs (or chicken breasts)
- 1 cup Buffalo sauce
- 2 tbsp taco seasoning
- 8 corn tortillas (or flour tortillas)
- Optional toppings: cheese, cilantro, onions
Instructions
- Season the chicken thighs with taco seasoning, ensuring every piece is well-coated.
- Heat a drizzle of oil in a large skillet over medium-high heat. Add the seasoned chicken and cook until browned, about 5 minutes per side.
- Pour in the Buffalo sauce, mixing it well with the chicken, then cover the skillet and reduce heat to low. Allow to simmer for about 30 minutes until the chicken is cooked thoroughly and tender.
- Shred the chicken with two forks directly in the skillet, allowing it to absorb the sauce.
- Toast the corn tortillas in another skillet until warm and pliable.
- Assemble your tacos by filling each tortilla with the Buffalo chicken and garnishing with cheese, onions, and cilantro.
Notes
Feel free to customize with veggies or different proteins such as shredded beef or jackfruit.
