- 1 cup Cherry Tomatoes, halved
- 1 cup Cucumber, diced
- 1 cup Bell Peppers, diced
- 1/2 Red Onion, chopped
- 1/4 cup Olive Oil
- 2 tbsp Lemon Juice
- 1 tsp Italian seasoning
- Salt and Pepper to taste
Instructions
- Cook the pasta: Bring a large pot of salted water to a boil. Add the bowtie pasta and cook according to package instructions until al dente.
- Prepare the veggies: While the pasta cooks, chop the cherry tomatoes, cucumber, bell peppers, and red onion into bite-sized pieces.
- Make the dressing: In a small bowl, whisk together the olive oil, lemon juice, Italian seasoning, salt, and pepper until well combined.
- Combine everything: Drain the cooked pasta and rinse it under cold water to cool. In a large bowl, mix the pasta with the chopped veggies and dressing.
- Toss & serve: Gently toss to combine all the ingredients, ensuring the pasta is evenly coated. Taste and adjust seasoning as needed.
