- 2 cups all-purpose flour
- 1 cup granulated sugar
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 1 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 cup fresh blueberries
- For the streusel topping:
- 1/2 cup brown sugar
- 1/4 cup butter, softened
- 1 teaspoon cinnamon
Instructions
- Preheat your oven to 375°F (190°C) and prepare your muffin tin with liners or cooking spray.
- In a large mixing bowl, whisk together the flour, granulated sugar, baking powder, and salt until combined.
- In another bowl, mix the milk, vegetable oil, and egg until smooth.
- Pour the wet ingredients into the dry mixture and stir until just combined. Fold in the fresh blueberries gently.
- For the streusel topping, combine brown sugar, flour, cinnamon, and butter in a small bowl. Use your fingers to blend until crumbly.
- Spoon the muffin batter into the prepared muffin tin, filling each cup about two-thirds full. Generously sprinkle the streusel topping on each muffin.
- Bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
- Allow them to cool in the tin for a few minutes before transferring to a wire rack.
Notes
Use frozen blueberries for convenience. Consider adding nuts or chocolate chips for variety.
