Description

A cozy family favorite featuring tender chicken, sun-dried tomatoes, and gooey cheese, all baked to perfection.


Ingredients

  • 2 lbs Chicken Breasts, boneless and skinless
  • 1 cup Sun-Dried Tomatoes
  • 2 cups Spinach, fresh
  • 8 oz Cream Cheese
  • 2 tsp Italian Seasoning
  • 2 cups Mozzarella Cheese, shredded
  • 1/2 cup Parmesan Cheese, grated
  • 3 cloves Garlic, minced
  • 2 tbsp Olive Oil

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. Sauté olive oil in a large skillet over medium heat, add minced garlic and cook for about a minute until fragrant.
  3. Combine fresh spinach and sauté until wilted.
  4. Prepare the chicken by chopping into bite-sized pieces and seasoning with salt, pepper, and Italian seasoning.
  5. Add the chicken pieces to the skillet and cook until browned, about 5-7 minutes.
  6. Mix in the cream cheese and blend until fully incorporated.
  7. Add the sun-dried tomatoes and mix well.
  8. Layer the mixture in a greased casserole dish, top with mozzarella and sprinkle parmesan. Bake for 20-25 minutes.
  9. Serve and enjoy!

Notes

You can substitute chicken with tofu or chickpeas for a plant-based version.
