- 2 lbs Chicken Breasts, boneless and skinless
- 1 cup Sun-Dried Tomatoes
- 2 cups Spinach, fresh
- 8 oz Cream Cheese
- 2 tsp Italian Seasoning
- 2 cups Mozzarella Cheese, shredded
- 1/2 cup Parmesan Cheese, grated
- 3 cloves Garlic, minced
- 2 tbsp Olive Oil
Instructions
- Preheat the oven to 375°F (190°C).
- Sauté olive oil in a large skillet over medium heat, add minced garlic and cook for about a minute until fragrant.
- Combine fresh spinach and sauté until wilted.
- Prepare the chicken by chopping into bite-sized pieces and seasoning with salt, pepper, and Italian seasoning.
- Add the chicken pieces to the skillet and cook until browned, about 5-7 minutes.
- Mix in the cream cheese and blend until fully incorporated.
- Add the sun-dried tomatoes and mix well.
- Layer the mixture in a greased casserole dish, top with mozzarella and sprinkle parmesan. Bake for 20-25 minutes.
- Serve and enjoy!
Notes
You can substitute chicken with tofu or chickpeas for a plant-based version.
