A heartwarming dish featuring roasted cherry tomatoes and creamy burrata cheese, perfect for any occasion.


Ingredients

  • 12 ounces of pasta (penne or spaghetti)
  • 2 cups cherry tomatoes, halved
  • 3 cloves fresh garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon dried basil
  • Salt and pepper to taste
  • 8 ounces burrata cheese
  • Fresh basil leaves for garnish

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Place the halved cherry tomatoes in a large baking dish and drizzle with olive oil. Sprinkle with minced garlic, dried basil, salt, and pepper.
  3. Roast the tomatoes in the preheated oven for about 15 minutes, or until they start bursting.
  4. Cook the pasta according to package instructions until al dente. Drain and set aside.
  5. Remove the dish from the oven and add the cooked pasta, stirring gently to combine.
  6. Create a well in the center of the pasta mixture and place the burrata cheese in the middle.
  7. Return the dish to the oven for another 5 minutes, or until the cheese is melty.
  8. Garnish with fresh basil leaves and serve immediately.

Notes

For a healthier option, add sautéed spinach or zucchini. Substitute burrata with fresh mozzarella if desired.
