- 12 ounces of pasta (penne or spaghetti)
- 2 cups cherry tomatoes, halved
- 3 cloves fresh garlic, minced
- 1 tablespoon olive oil
- 1 teaspoon dried basil
- Salt and pepper to taste
- 8 ounces burrata cheese
- Fresh basil leaves for garnish
Instructions
- Preheat your oven to 400°F (200°C).
- Place the halved cherry tomatoes in a large baking dish and drizzle with olive oil. Sprinkle with minced garlic, dried basil, salt, and pepper.
- Roast the tomatoes in the preheated oven for about 15 minutes, or until they start bursting.
- Cook the pasta according to package instructions until al dente. Drain and set aside.
- Remove the dish from the oven and add the cooked pasta, stirring gently to combine.
- Create a well in the center of the pasta mixture and place the burrata cheese in the middle.
- Return the dish to the oven for another 5 minutes, or until the cheese is melty.
- Garnish with fresh basil leaves and serve immediately.
Notes
For a healthier option, add sautéed spinach or zucchini. Substitute burrata with fresh mozzarella if desired.
