- 4 Chicken breasts
- 1 bunch Asparagus, trimmed to 3 inches
- 4 oz Cream cheese
- 2 cloves Garlic, minced
- 1/2 cup Parmesan cheese
- 1 tsp Italian seasoning
- 1 cup Breadcrumbs
- Salt and pepper, to taste
- Olive oil, for drizzling
Instructions
- Preheat your oven to 375°F (190°C) while you prepare your chicken.
- Mix cream cheese, parmesan, minced garlic, Italian seasoning, salt, and pepper in a bowl. Set aside.
- Trim the asparagus spears, slicing them to about 3 inches in length.
- Slice a pocket into each chicken breast without cutting all the way through.
- Stuff each pocket with a few asparagus spears and a generous scoop of the cheese mixture.
- Secure the opening with toothpicks, if necessary, to keep the filling inside.
- Roll the chicken in breadcrumbs, pressing gently to ensure the coating sticks.
- Place the chicken in a baking dish and drizzle with olive oil.
- Bake for 25-30 minutes, or until the chicken is cooked through and the juices run clear.
