- 4 salmon fillets (about 6 ounces each), skin on or off
- 2 tablespoons za’atar
- 3 cloves garlic, minced
- 2 tablespoons extra-virgin olive oil
- 1 lemon, zest and juice
- 1 teaspoon kosher salt
- 1/2 teaspoon freshly ground black pepper
- 1 tablespoon honey or maple syrup (optional)
- Fresh parsley or cilantro for garnish
Instructions
- Preheat your oven to 425°F (220°C) and prepare a baking sheet.
- Pat the salmon dry with paper towels.
- Whisk together olive oil, minced garlic, lemon zest, lemon juice, za’atar, salt, pepper, and honey or maple syrup in a small bowl.
- Brush each fillet generously with the za’atar-garlic mixture.
- Place the fillets on the prepared sheet, skin-side down.
- Roast for 10-12 minutes until the salmon is just opaque and flakes easily.
- If desired, switch to broil for 1-2 minutes for a golden top.
- Remove from the oven, let rest for 2 minutes, then garnish with fresh parsley or cilantro and a squeeze of lemon.
Notes
For a dairy-free version, add a small pat of olive oil mixed with nutritional yeast. Use pink or red salmon for different flavors.
