- 3 to 4 pounds chuck roast
- Salt and pepper (to taste)
- 2 tablespoons olive oil
- 4 medium carrots, chopped
- 3 medium potatoes, diced
- 1 large onion, quartered
- 4 cloves fresh garlic, minced
- 2 cups beef broth
- 1 tablespoon Worcestershire sauce
- 2 sprigs fresh thyme (or 1 teaspoon dried)
- 1 bay leaf
Instructions
- Generously season the roast with salt and pepper.
- In a large skillet, heat olive oil over medium-high heat. Brown the roast on all sides (about 3-4 minutes per side).
- While the meat is searing, chop the carrots, onions, and potatoes.
- Transfer the seared roast to the slow cooker and surround it with chopped vegetables.
- Pour in the beef broth and Worcestershire sauce, then add the minced garlic, thyme, and bay leaf.
- Cover and set the slow cooker on low for 8 hours or high for 4 hours.
- The roast is done when it shreds easily with a fork.
- Remove the bay leaf and thyme sprigs, and serve the pot roast with the vegetables and sauce.
Notes
Let the roast rest for 10-15 minutes before slicing to ensure juiciness.
