Ingredients

  • 3 to 4 pounds chuck roast
  • Salt and pepper (to taste)
  • 2 tablespoons olive oil
  • 4 medium carrots, chopped
  • 3 medium potatoes, diced
  • 1 large onion, quartered
  • 4 cloves fresh garlic, minced
  • 2 cups beef broth
  • 1 tablespoon Worcestershire sauce
  • 2 sprigs fresh thyme (or 1 teaspoon dried)
  • 1 bay leaf

Instructions

  1. Generously season the roast with salt and pepper.
  2. In a large skillet, heat olive oil over medium-high heat. Brown the roast on all sides (about 3-4 minutes per side).
  3. While the meat is searing, chop the carrots, onions, and potatoes.
  4. Transfer the seared roast to the slow cooker and surround it with chopped vegetables.
  5. Pour in the beef broth and Worcestershire sauce, then add the minced garlic, thyme, and bay leaf.
  6. Cover and set the slow cooker on low for 8 hours or high for 4 hours.
  7. The roast is done when it shreds easily with a fork.
  8. Remove the bay leaf and thyme sprigs, and serve the pot roast with the vegetables and sauce.

Notes

Let the roast rest for 10-15 minutes before slicing to ensure juiciness.
