  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Optional: fresh parsley, chopped

Instructions

  1. Pat the chuck roast dry with paper towels and season generously with salt and pepper.
  2. In a hot skillet, sear the meat on both sides for about 4-5 minutes until browned.
  3. In the slow cooker, add chopped onions, carrots, and potatoes, placing the seared roast on top.
  4. In a small bowl, mix the beef broth, minced garlic, tomato paste, Worcestershire sauce, and thyme, then pour over the roast and vegetables.
