- 3–4 pounds chuck roast
- 4 cups beef broth
- 4 large carrots, chopped
- 4 large potatoes, cubed
- 1 onion, sliced
- 4 cloves garlic, minced
- 2 tablespoons tomato paste
- 2 tablespoons Worcestershire sauce
- 1 teaspoon dried thyme
- Salt and pepper to taste
- Optional: fresh parsley, chopped
Instructions
- Pat the chuck roast dry with paper towels and season generously with salt and pepper.
- In a hot skillet, sear the meat on both sides for about 4-5 minutes until browned.
- In the slow cooker, add chopped onions, carrots, and potatoes, placing the seared roast on top.
- In a small bowl, mix the beef broth, minced garlic, tomato paste, Worcestershire sauce, and thyme, then pour over the roast and vegetables.
- Cover the slow cooker and set it to low for 8-10 hours or high for 4-6 hours.
- Check the roast for tenderness; it should be fork-tender.
- Slice the meat and serve with the vegetables, drizzled with broth and garnished with fresh parsley.
Notes
For best results, let the roast rest for 10-15 minutes after cooking before slicing. You can also substitute seasonal vegetables for a different flavor profile.
