Ingredients

  • 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 2 carrots, diced
  • 2 celery stalks, diced
  • 4 cups vegetable broth
  • 1 can (14.5 oz) diced tomatoes, with juices
  • 1 teaspoon dried thyme
  • 1 teaspoon dried rosemary
  • 2 cups kale or spinach
  • Salt and pepper, to taste
  • Olive oil, for sautéing
  • Fresh parsley, chopped, for garnish

Instructions

  1. Heat 2 tablespoons of olive oil in a large pot over medium heat.
  2. Add the diced onion and sauté until translucent, about 3-4 minutes.
  3. Toss in the minced garlic, carrots, and celery. Cook for another 5 minutes.
  4. Add the dried thyme and rosemary, stirring to coat.
  5. Pour in the vegetable broth and diced tomatoes with their juices. Bring to a gentle boil.
  6. Reduce heat to a simmer and add the drained white beans. Season with salt and pepper to taste.
  7. Let the soup simmer for about 20 minutes.
  8. Stir in the kale or spinach and cook until wilted.
  9. Taste and adjust seasonings before removing from heat.
  10. Ladle the soup into bowls, garnish with fresh parsley, and enjoy warm.
