Ingredients

- 2 cans (15 oz each) white beans (cannellini or great northern), drained and rinsed
- 1 medium onion, diced
- 2 cloves garlic, minced
- 2 carrots, diced
- 2 celery stalks, diced
- 4 cups vegetable broth
- 1 can (14.5 oz) diced tomatoes, with juices
- 1 teaspoon dried thyme
- 1 teaspoon dried rosemary
- 2 cups kale or spinach
- Salt and pepper, to taste
- Olive oil, for sautéing
- Fresh parsley, chopped, for garnish
Instructions
- Heat 2 tablespoons of olive oil in a large pot over medium heat.
- Add the diced onion and sauté until translucent, about 3-4 minutes.
- Toss in the minced garlic, carrots, and celery. Cook for another 5 minutes.
- Add the dried thyme and rosemary, stirring to coat.
- Pour in the vegetable broth and diced tomatoes with their juices. Bring to a gentle boil.
- Reduce heat to a simmer and add the drained white beans. Season with salt and pepper to taste.
- Let the soup simmer for about 20 minutes.
- Stir in the kale or spinach and cook until wilted.
- Taste and adjust seasonings before removing from heat.
- Ladle the soup into bowls, garnish with fresh parsley, and enjoy warm.
