Ingredients

- 2 lbs chicken bones (preferably from a roast chicken)
- 1 medium onion, chopped
- 3 cloves garlic, minced
- 2-inch piece fresh ginger, sliced
- 2 teaspoons ground turmeric
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1 bay leaf
- 10 cups water
- Salt and pepper to taste
- Fresh herbs (parsley or thyme) optional
Instructions
- Gather all ingredients on your kitchen counter.
- Place the chicken bones in a large stockpot.
- Add chopped onion, garlic, ginger, carrots, and celery.
- Sprinkle in turmeric, bay leaf, salt, and pepper.
- Add water to cover the bones and vegetables, bring to a boil.
- Once boiling, reduce to low heat and let simmer for 4-6 hours.
- Carefully strain the broth into a heatproof bowl and discard the solids.
- Season to taste before serving.
