- 1 lb Italian sausage (mild or spicy)
- 1 medium onion, diced
- 3 cloves garlic, minced
- 4 cups chicken broth
- 1 can (14 oz) diced tomatoes
- 2 cups fresh spinach
- 9 oz cheese tortellini
- 1 tsp Italian seasoning
- Salt and pepper to taste
- Grated Parmesan for serving
Instructions
- In a large pot over medium heat, crumble the Italian sausage. Allow it to brown for about 5–7 minutes, stirring occasionally.
- Add the diced onion and minced garlic to the pot. Cook for another 5 minutes, until the onion turns translucent.
- Pour in the chicken broth and add the canned tomatoes (with their juice). Stir in the Italian seasoning, salt, and pepper. Bring to a gentle boil.
- Once boiling, add the tortellini. Cook according to package instructions, typically about 3–5 minutes, until al dente.
- Fold in the fresh spinach and let it wilt for a minute or two.
- Ladle the soup into bowls and top with grated Parmesan before serving.
Notes
For a lighter option, substitute half the sausage with ground turkey. You can also use plant-based sausage for a vegetarian version.
