Description

A flavorful wrap filled with tender chicken, crunchy vegetables, and a creamy, savory peanut sauce that transports you to the streets of Thailand.


Ingredients

  • 2 Chicken Breasts, boneless and skinless
  • 1/4 cup Peanut Butter
  • 2 tbsp Soy Sauce
  • 1 tbsp Honey
  • Juice of 1/2 Lime
  • 4 Wraps or Tortillas
  • 1 cup Shredded Carrots
  • 1 cup Bell Peppers, thinly sliced
  • 1 cup Cucumbers, thinly sliced
  • Cilantro and Green Onions, for garnish

Instructions

  1. Season chicken with salt and pepper, sauté in a pan over medium heat for 6-7 minutes on each side until cooked through. Allow to rest, then slice into thin strips.
  2. Prepare the peanut sauce by whisking together peanut butter, soy sauce, honey, and lime juice. Adjust flavors as desired.
  3. Chop vegetables into thin strips.
  4. Spread peanut sauce on a tortilla, layer with sliced chicken and vegetables.
  5. Roll the wrap tight, tucking in the edges, and slice in half. Drizzle with extra peanut sauce if desired.

Notes

Store leftover wraps in an airtight container for up to 3 days. Keep peanut sauce separate for the freshest flavor.
