- 2 Chicken Breasts, boneless and skinless
- 1/4 cup Peanut Butter
- 2 tbsp Soy Sauce
- 1 tbsp Honey
- Juice of 1/2 Lime
- 4 Wraps or Tortillas
- 1 cup Shredded Carrots
- 1 cup Bell Peppers, thinly sliced
- 1 cup Cucumbers, thinly sliced
- Cilantro and Green Onions, for garnish
Instructions
- Season chicken with salt and pepper, sauté in a pan over medium heat for 6-7 minutes on each side until cooked through. Allow to rest, then slice into thin strips.
- Prepare the peanut sauce by whisking together peanut butter, soy sauce, honey, and lime juice. Adjust flavors as desired.
- Chop vegetables into thin strips.
- Spread peanut sauce on a tortilla, layer with sliced chicken and vegetables.
- Roll the wrap tight, tucking in the edges, and slice in half. Drizzle with extra peanut sauce if desired.
Notes
Store leftover wraps in an airtight container for up to 3 days. Keep peanut sauce separate for the freshest flavor.
