  • Taco Seasoning (1 packet)
  • Black Beans (1 can, drained and rinsed)
  • Corn (1 cup, frozen or canned)
  • Diced Tomatoes (1 can, with juices)
  • Shredded Cheese (1 cup, your choice)
  • Fresh Cilantro (for garnish)
  • Sour Cream or Greek Yogurt (for serving)

Instructions

  1. Boil the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
  2. Brown the Meat: In a large skillet over medium heat, add a splash of oil and brown the ground meat.
  3. Add Seasonings: Stir in the taco seasoning, letting it coat the meat.
  4. Incorporate Veggies: Add black beans, corn, and diced tomatoes to the skillet and simmer for about 5 minutes.
  5. Combine with Tortellini: Gently fold the drained tortellini into the meat and veggie mixture.
  6. Add Cheese: Sprinkle shredded cheese over the top, cover, reduce heat, and let it melt for 3-4 minutes.

Notes
