Ingredients
- Cheese Tortellini (about 12 oz)
- Ground Beef or Ground Turkey (1 lb)
- Taco Seasoning (1 packet)
- Black Beans (1 can, drained and rinsed)
- Corn (1 cup, frozen or canned)
- Diced Tomatoes (1 can, with juices)
- Shredded Cheese (1 cup, your choice)
- Fresh Cilantro (for garnish)
- Sour Cream or Greek Yogurt (for serving)
Instructions
- Boil the Tortellini: In a large pot of boiling salted water, cook the cheese tortellini according to package instructions until al dente. Drain and set aside.
- Brown the Meat: In a large skillet over medium heat, add a splash of oil and brown the ground meat.
- Add Seasonings: Stir in the taco seasoning, letting it coat the meat.
- Incorporate Veggies: Add black beans, corn, and diced tomatoes to the skillet and simmer for about 5 minutes.
- Combine with Tortellini: Gently fold the drained tortellini into the meat and veggie mixture.
- Add Cheese: Sprinkle shredded cheese over the top, cover, reduce heat, and let it melt for 3-4 minutes.
- Garnish and Serve: Remove from heat, garnish with fresh cilantro, and serve hot with sour cream or Greek yogurt.
Notes
For a vegetarian option, swap out the meat for sautéed mushrooms or extra beans. Add spicy peppers for a kick.
