Ingredients

  • 12 oz Cheese Tortellini, fresh or frozen
  • 1 lb Ground Beef or Turkey (or black beans for a vegetarian option)
  • 2 tablespoons Taco Seasoning
  • 1 can (14.5 oz) Diced Tomatoes, with juices
  • 1 cup Chicken Broth (or vegetable broth)
  • 1 cup Corn, frozen or canned
  • 1 can (15 oz) Black Beans, drained
  • 1 cup shredded Cheddar or Mexican blend cheese
  • Toppings: Chopped cilantro, jalapeños, sour cream, avocado

Instructions

  1. In a large pot over medium heat, add ground meat and cook for about 5-7 minutes until browned.
  2. Stir in taco seasoning, letting it coat the meat evenly.
  3. Add diced tomatoes with juice and chicken broth, stirring and letting it simmer.
  4. Once bubbling, add cheese tortellini and cook according to package instructions (about 3-5 minutes).
  5. Add corn and black beans, stirring until combined and heated through.
  6. Sprinkle shredded cheese over the top and cover for 2-3 minutes, until melted.
  7. Remove from heat and serve warm with toppings.

Notes

Serve with guacamole and tortilla chips for a complete meal.
