Ingredients

- 12 oz Cheese Tortellini, fresh or frozen
- 1 lb Ground Beef or Turkey (or black beans for a vegetarian option)
- 2 tablespoons Taco Seasoning
- 1 can (14.5 oz) Diced Tomatoes, with juices
- 1 cup Chicken Broth (or vegetable broth)
- 1 cup Corn, frozen or canned
- 1 can (15 oz) Black Beans, drained
- 1 cup shredded Cheddar or Mexican blend cheese
- Toppings: Chopped cilantro, jalapeños, sour cream, avocado
Instructions
- In a large pot over medium heat, add ground meat and cook for about 5-7 minutes until browned.
- Stir in taco seasoning, letting it coat the meat evenly.
- Add diced tomatoes with juice and chicken broth, stirring and letting it simmer.
- Once bubbling, add cheese tortellini and cook according to package instructions (about 3-5 minutes).
- Add corn and black beans, stirring until combined and heated through.
- Sprinkle shredded cheese over the top and cover for 2-3 minutes, until melted.
- Remove from heat and serve warm with toppings.
Notes
