- 1 pound ground turkey or beef
- 1 can (15 oz) black beans, drained and rinsed
- 1 can (15 oz) kidney beans, drained and rinsed
- 1 can (15 oz) diced tomatoes
- 1 packet taco seasoning
- 1 cup corn (frozen or canned)
- 1 small onion, diced
- 2 cloves garlic, minced
- 4 cups chicken or vegetable broth
- Optional toppings: Shredded cheese, fresh cilantro, green onions, sour cream, or avocado
Instructions
- Heat a large pot over medium heat, add the ground turkey or beef, and cook for about 5-7 minutes until browned.
- Add the diced onion and minced garlic, cooking until the onions become translucent.
- Sprinkle in the taco seasoning mix, stirring to evenly coat the meat and onions.
- Add the black beans, kidney beans, diced tomatoes (with their juices), corn, and broth. Stir together and bring to a gentle boil.
- Reduce heat and let the soup simmer for about 15 minutes.
- Taste and adjust seasoning as needed.
Notes
Serve with crunchy tortilla chips or cornbread. Leftovers can be stored for up to 5 days in the fridge or frozen for up to 3 months.
