Description

A cozy Taco Soup that is easy to make and perfect for family gatherings, packed with flavor and customizable toppings.


Ingredients

  • 1 pound ground turkey or beef
  • 1 can (15 oz) black beans, drained and rinsed
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 can (15 oz) diced tomatoes
  • 1 packet taco seasoning
  • 1 cup corn (frozen or canned)
  • 1 small onion, diced
  • 2 cloves garlic, minced
  • 4 cups chicken or vegetable broth
  • Optional toppings: Shredded cheese, fresh cilantro, green onions, sour cream, or avocado

Instructions

  1. Heat a large pot over medium heat, add the ground turkey or beef, and cook for about 5-7 minutes until browned.
  2. Add the diced onion and minced garlic, cooking until the onions become translucent.
  3. Sprinkle in the taco seasoning mix, stirring to evenly coat the meat and onions.
  4. Add the black beans, kidney beans, diced tomatoes (with their juices), corn, and broth. Stir together and bring to a gentle boil.
  5. Reduce heat and let the soup simmer for about 15 minutes.
  6. Taste and adjust seasoning as needed.

Notes

Serve with crunchy tortilla chips or cornbread. Leftovers can be stored for up to 5 days in the fridge or frozen for up to 3 months.
