- 2 large onions
- 1 pound ground chicken
- 1/2 cup teriyaki sauce
- 1 tablespoon fresh ginger, grated
- 2 cloves garlic, minced
- 1 bell pepper, diced
- 1 carrot, finely diced
- 2 tablespoons sesame oil
- Salt and pepper to taste
Instructions
- Preheat your oven to 375°F (190°C).
- Prepare the onions by slicing the tops off and scooping out the insides, leaving a 1/4 inch shell.
- In a skillet, heat the sesame oil over medium heat and sauté the minced garlic and grated ginger until fragrant, about 1 minute.
- Add the ground chicken, bell pepper, and diced carrot, cooking until the chicken is browned and cooked through, about 5-7 minutes.
- Pour in the teriyaki sauce, stir to combine, and let simmer for another 2-3 minutes until the sauce thickens.
- Stuff the onion shells with the chicken mixture, packing it tightly.
- Place the stuffed onions upright in a baking dish, add a splash of water, cover with foil, and bake for 25 minutes.
- Remove the foil and bake for an additional 5 minutes until golden.
Notes
Incorporate diced pineapple for added sweetness. For a vegetarian version, substitute chicken with lentils and mushrooms.
