- 1 pound boneless, skinless chicken breasts
- 1 cup bell peppers (mixed colors)
- 1 cup pineapple chunks
- 1 onion
- 3 cloves fresh garlic
- 3 tablespoons soy sauce
- ½ cup sugar
- ¼ cup apple cider vinegar
- 1 tablespoon cornstarch
- Salt and pepper to taste
Instructions
- Cut the chicken into bite-sized pieces and pat dry. Season lightly with salt and pepper.
- In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken and cook for about 5-7 minutes until golden brown and cooked through.
- Add diced onions, bell peppers, and garlic to the skillet. Stir-fry for about 3-4 minutes until the vegetables soften.
- In a bowl, mix the sugar, soy sauce, apple cider vinegar, and cornstarch until smooth. Pour over the chicken and vegetables, and stir to combine.
- Lower the heat and let it simmer for about 5 minutes until the sauce thickens.
- Gently fold in the pineapple chunks and cook together for another 2 minutes.
Notes
Serve over jasmine rice or with steamed broccoli. Leftovers can be stored in an airtight container for up to three days.
