Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 cup bell peppers (mixed colors)
  • 1 cup pineapple chunks
  • 1 onion
  • 3 cloves fresh garlic
  • 3 tablespoons soy sauce
  • ½ cup sugar
  • ¼ cup apple cider vinegar
  • 1 tablespoon cornstarch
  • Salt and pepper to taste

Instructions

  1. Cut the chicken into bite-sized pieces and pat dry. Season lightly with salt and pepper.
  2. In a large skillet or wok, heat a tablespoon of oil over medium-high heat. Add the chicken and cook for about 5-7 minutes until golden brown and cooked through.
  3. Add diced onions, bell peppers, and garlic to the skillet. Stir-fry for about 3-4 minutes until the vegetables soften.
  4. In a bowl, mix the sugar, soy sauce, apple cider vinegar, and cornstarch until smooth. Pour over the chicken and vegetables, and stir to combine.
  5. Lower the heat and let it simmer for about 5 minutes until the sauce thickens.
  6. Gently fold in the pineapple chunks and cook together for another 2 minutes.

Notes

Serve over jasmine rice or with steamed broccoli. Leftovers can be stored in an airtight container for up to three days.
