Ingredients

  • 8 oz pasta (spaghetti or penne, gluten-free if needed)
  • 1 cup sun-dried tomatoes (packed in oil)
  • 3 cloves fresh garlic (minced)
  • 1 cup heavy cream (or substitute Greek yogurt)
  • 1/2 cup grated Parmesan cheese
  • 1 tablespoon olive oil (extra virgin)
  • 1/2 teaspoon red pepper flakes (optional)
  • Salt and pepper (to taste)
  • Fresh basil (for garnish)

Instructions

  1. Cook your pasta in boiling salted water according to package instructions until al dente.
  2. In a large skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
  3. Add the sun-dried tomatoes to the skillet and stir for 2-3 minutes.
  4. Pour in the heavy cream, reduce heat to low, and let it simmer for about 5 minutes until thickened. Season with salt, pepper, and red pepper flakes.
  5. Drain the pasta, reserving 1/2 cup of pasta water. Add the pasta to the skillet and toss, adding reserved pasta water as needed for consistency.
  6. Stir in the grated Parmesan cheese until melted and well combined.
  7. Serve immediately, garnished with fresh basil.

Notes

For a healthier option, use whole wheat pasta or replace cream with cashew cream. Add seasonal veggies for freshness.
