Ingredients

- 8 oz pasta (spaghetti or penne, gluten-free if needed)
- 1 cup sun-dried tomatoes (packed in oil)
- 3 cloves fresh garlic (minced)
- 1 cup heavy cream (or substitute Greek yogurt)
- 1/2 cup grated Parmesan cheese
- 1 tablespoon olive oil (extra virgin)
- 1/2 teaspoon red pepper flakes (optional)
- Salt and pepper (to taste)
- Fresh basil (for garnish)
Instructions
- Cook your pasta in boiling salted water according to package instructions until al dente.
- In a large skillet over medium heat, add olive oil and sauté minced garlic for about 1 minute until fragrant.
- Add the sun-dried tomatoes to the skillet and stir for 2-3 minutes.
- Pour in the heavy cream, reduce heat to low, and let it simmer for about 5 minutes until thickened. Season with salt, pepper, and red pepper flakes.
- Drain the pasta, reserving 1/2 cup of pasta water. Add the pasta to the skillet and toss, adding reserved pasta water as needed for consistency.
- Stir in the grated Parmesan cheese until melted and well combined.
- Serve immediately, garnished with fresh basil.
Notes
For a healthier option, use whole wheat pasta or replace cream with cashew cream. Add seasonal veggies for freshness.
