Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté the Vegetables: Heat olive oil in a skillet over medium heat, add minced garlic and sauté for 30 seconds. Add chopped mushrooms and cook for 5 minutes until soft. Add spinach and cook until wilted; season with salt and pepper.
  3. Make the Filling: Combine the sautéed mixture with cream cheese and Parmesan in a bowl until creamy.
  4. Prepare the Chicken: Slice each chicken breast horizontally to create a pocket.
  5. Stuff the Chicken: Fill each pocket with the creamy mixture and secure with toothpicks if necessary.
  6. Sear the Chicken: In the same skillet, sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
  7. Bake: Transfer to a baking dish and bake for 15-20 minutes until cooked through (165°F internal temperature).
  8. Rest: Let the chicken rest for 5 minutes before serving.

Notes
