- 1 cup fresh spinach
- 1 cup mushrooms, finely chopped
- 2 cloves garlic, minced
- 1/2 cup cream cheese
- 1/4 cup grated Parmesan cheese
- Salt and pepper, to taste
- Olive oil, for sautéing
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté the Vegetables: Heat olive oil in a skillet over medium heat, add minced garlic and sauté for 30 seconds. Add chopped mushrooms and cook for 5 minutes until soft. Add spinach and cook until wilted; season with salt and pepper.
- Make the Filling: Combine the sautéed mixture with cream cheese and Parmesan in a bowl until creamy.
- Prepare the Chicken: Slice each chicken breast horizontally to create a pocket.
- Stuff the Chicken: Fill each pocket with the creamy mixture and secure with toothpicks if necessary.
- Sear the Chicken: In the same skillet, sear the stuffed chicken breasts for 3-4 minutes on each side until golden brown.
- Bake: Transfer to a baking dish and bake for 15-20 minutes until cooked through (165°F internal temperature).
- Rest: Let the chicken rest for 5 minutes before serving.
Notes
For a lighter version, substitute Greek yogurt for cream cheese. Serve with fluffy quinoa or a mixed greens salad.
