Ingredients

3 bell peppers

2 tablespoons cooking oil

1 lb Italian sausage

1 yellow onion, diced

3 garlic cloves, minced

1 teaspoon Italian seasoning

1/2 teaspoon garlic powder

1 1/4 teaspoons salt (divided)

1/4 teaspoon freshly cracked black pepper (divided)

1 cup marinara sauce

1/2 cup uncooked long grain white rice

3/4 cup chicken broth

1 cup shredded mozzarella
Instructions

Preheat the oven to 350°F (175°C). Prepare bell peppers and bake for 20 minutes.

Brown the sausage and sauté onion and garlic.

Add rice, marinara sauce, seasonings, and chicken broth to the skillet. Simmer for 20 minutes.

Fluff rice and stuff bell peppers with the filling.

Top with mozzarella and bake, then broil until cheese is golden brown.
