Ingredients

  • 3 bell peppers

  • 2 tablespoons cooking oil

  • 1 lb Italian sausage

  • 1 yellow onion, diced

  • 3 garlic cloves, minced

  • 1 teaspoon Italian seasoning

  • 1/2 teaspoon garlic powder

  • 1 1/4 teaspoons salt (divided)

  • 1/4 teaspoon freshly cracked black pepper (divided)

  • 1 cup marinara sauce

  • 1/2 cup uncooked long grain white rice

  • 3/4 cup chicken broth

  • 1 cup shredded mozzarella


Instructions

  • Preheat the oven to 350°F (175°C). Prepare bell peppers and bake for 20 minutes.

  • Brown the sausage and sauté onion and garlic.

  • Add rice, marinara sauce, seasonings, and chicken broth to the skillet. Simmer for 20 minutes.

  • Fluff rice and stuff bell peppers with the filling.

  • Top with mozzarella and bake, then broil until cheese is golden brown.
