- 3/4 cup granulated sugar

- 1 cup buttermilk

- 1 1/2 cups fresh strawberries, hulled and chopped
- 1/2 cup cold unsalted butter, cubed (streusel)
- 3/4 cup all-purpose flour (streusel)
- 1/2 cup brown sugar (streusel)
- Pinch of salt and a sprinkle of cinnamon (optional, streusel)
Instructions
- Preheat the oven to 375°F (190°C). Line a 12-cup muffin tin with paper liners or lightly grease each cup.
- Make the streusel first: in a bowl, combine 3/4 cup flour, 1/2 cup brown sugar, a pinch of salt, and cinnamon if using. Cut in cold butter until the mixture resembles coarse crumbs. Set aside.
- Whisk dry ingredients: in a large bowl, mix 2 cups flour, granulated sugar, baking powder, baking soda, and salt.
- Whisk wet ingredients separately: in another bowl, combine buttermilk, eggs, melted butter, and vanilla until smooth.
- Fold together: make a well in the dry ingredients and pour in the wet mixture. Gently fold until just combined.
- Fold in strawberries: carefully fold chopped strawberries into the batter.
- Fill the tins: spoon batter into the prepared muffin cups, filling each about two-thirds full. Sprinkle streusel on top, pressing lightly.
- Bake: place the tin in the oven for 18–22 minutes, until the tops are golden and a toothpick inserted into the center comes out clean.
- Cool slightly and enjoy: let muffins cool in the tin for 5 minutes before transferring to a wire rack.
