- 2 cups fresh strawberries, sliced
- 1/4 cup granulated sugar (for strawberries)
- 1 cup heavy cream (for whipped cream)
- 2 tablespoons powdered sugar
- 1 teaspoon vanilla extract
Instructions
- Preheat your oven to 400°F (200°C).
- In a large bowl, whisk together flour, 1/4 cup sugar, baking powder, and salt.
- Cut in cold, cubed butter until the mixture resembles coarse crumbs.
- Stir in heavy cream until just combined.
- Pat dough into a rectangle, about 1-inch thick, and cut out shortcakes.
- Bake for 12-15 minutes, or until golden brown.
- While baking, slice strawberries and toss with 1/4 cup sugar; let sit for 10 minutes.
- In a mixing bowl, whip heavy cream, powdered sugar, and vanilla extract until soft peaks form.
- Once shortcakes are cool, split in half and layer with strawberries and whipped cream.
- Serve immediately and enjoy.
