- 4 boneless, skinless chicken breasts
- 2 cups fresh spinach
- 1 cup ricotta cheese
- ½ cup shredded mozzarella cheese
- 2 cloves garlic, minced
- 1 teaspoon salt
- ½ teaspoon pepper
- 1 tablespoon olive oil
- Optional: fresh herbs like basil or oregano
Instructions
- Preheat your oven to 375°F (190°C).
- In a skillet, heat 1 tablespoon of olive oil over medium heat. Add minced garlic and sauté until fragrant (about 1 minute).
- Add spinach to the skillet and cook until wilted, stirring occasionally (about 2-3 minutes). Remove from heat and let cool slightly.
- In a mixing bowl, combine ricotta, mozzarella, salt, pepper, and wilted spinach mixture. Mix until well combined.
- Carefully slice a pocket into each chicken breast, making sure not to cut all the way through.
- Stuff each chicken breast generously with the spinach mixture, using toothpicks to secure if necessary.
- Place stuffed chicken breasts in a baking dish. Drizzle a little olive oil over the top and sprinkle with a pinch of salt and pepper.
- Bake for 25-30 minutes or until the chicken reaches an internal temperature of 165°F (74°C).
- Let it rest for a few minutes before serving.
Notes
For a lighter option, use low-fat ricotta or mozzarella. Feel free to experiment with additional flavorings like sun-dried tomatoes or artichokes.
