Ingredients

  • 1/2 recipe all-butter, extra-flaky pie crust (or 1 sheet of puff pastry)
  • 1 (3-ounce) package cream cheese, room temperature
  • 1/3 cup half and half or milk
  • 3 large eggs
  • 1 (10-ounce) package frozen chopped spinach, thawed and drained
  • 1/2 cup grated cheddar (Gruyère works well, too)
  • 1/4 cup grated Parmesan
  • 4 to 6 green onions, thinly sliced (or 1/2 cup finely diced red or white onion or shallots)
  • 1/4 teaspoon salt
  • 1/4 teaspoon freshly ground black pepper

Instructions

  • Preheat the oven to 425°F. Roll out the pie crust (or puff pastry) and press it into a 9-inch pie dish or tart pan.
  • In a bowl, beat the cream cheese until smooth. Gradually add in the half and half and eggs.
  • Stir in the grated cheeses, onions, and spinach. Season with salt and pepper.
  • Pour the mixture into the prepared crust and bake for 25 minutes, until golden and set.
  • Cool for 10 minutes before serving.
