Ingredients

Scale
  • 4 lbs pork loin
  • 1/2 cup brown sugar
  • 1 tsp cayenne pepper
  • 1 tsp garlic powder
  • 1 tsp paprika
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 3 Tbsp olive oil

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a small bowl, mix together the brown sugar, cayenne pepper, garlic powder, paprika, salt, and black pepper.
  3. Rub the spice mixture evenly over the pork loin.
  4. In a large skillet, heat the olive oil over medium-high heat.
  5. Sear the pork loin on all sides until browned (about 3-4 minutes per side).
  6. Transfer the seared pork loin to a baking dish and cover it with aluminum foil.
  7. Bake in the preheated oven for 1 hour and 10 minutes, or until the internal temperature reaches 145°F (63°C).
  8. Let the pork rest for 10 minutes before slicing and serving.

Notes

For deeper flavor, marinate the pork loin in the spice mixture for a few hours or overnight before cooking. Adjust the cayenne pepper according to your preferred spice level.
