- 1 cup sourdough discard (active or refrigerated)
- 2 cups all-purpose flour (or half whole wheat)
- 1 teaspoon salt
- 1 tablespoon olive oil or melted butter
- 1/2 cup warm water, plus more as needed
- Optional: 1 teaspoon sugar
- Optional: 1/2 teaspoon cumin or smoked paprika
Instructions
- Combine sourdough discard, warm water, and olive oil in a mixing bowl. Stir until smooth and slightly bubbly.
- Add the flour and salt, mixing with a wooden spoon until a rough dough forms.
- Turn the dough onto a floured surface and knead for 2 to 3 minutes until smooth and elastic.
- Divide the dough into 8 equal pieces and roll each into a ball. Let rest for 15 minutes.
- Heat a skillet over medium-high heat. Roll each ball into a thin round, about 6 to 8 inches across.
- Cook tortillas in the skillet for 30 to 45 seconds per side, until brown spots appear and they puff slightly.
- Serve immediately or cool and store for later.
