- 2 cups cooked jasmine rice
- 1 pound smoked sausage (kielbasa or andouille recommended)
- 1 cup frozen mixed vegetables (peas, carrots, and corn)
- 2 large eggs
- 3 green onions (sliced thinly)
- 4 cloves fresh garlic (minced)
- 2 tablespoons soy sauce
- 1 tablespoon sesame oil
- Salt and pepper to taste
- Optional: Sriracha or hot sauce
Instructions
- Prep your ingredients by chopping, slicing, and measuring everything needed.
- In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat.
- Add the sliced smoked sausage and sauté for about 5-7 minutes until browned and crispy.
- Introduce the minced garlic to the pan, stirring frequently until fragrant (about 1 minute).
- Push the sausage to one side of the pan and crack the eggs on the other side; scramble until fully cooked and mix everything together.
- Add the frozen mixed vegetables and stir well, cooking for another 3-4 minutes until heated through.
- Fold in the cooked rice along with the soy sauce, breaking up clumps as needed.
- Finish by mixing in the sliced green onions and seasoning with salt and pepper to taste.
- Serve warm, optionally topped with Sriracha for extra heat.
Notes
For the best texture, use day-old rice. Adjust seasonings to taste and feel free to customize with different vegetables.
