  • 2 cups cooked jasmine rice
  • 1 pound smoked sausage (kielbasa or andouille recommended)
  • 1 cup frozen mixed vegetables (peas, carrots, and corn)
  • 2 large eggs
  • 3 green onions (sliced thinly)
  • 4 cloves fresh garlic (minced)
  • 2 tablespoons soy sauce
  • 1 tablespoon sesame oil
  • Salt and pepper to taste
  • Optional: Sriracha or hot sauce

Instructions

  1. Prep your ingredients by chopping, slicing, and measuring everything needed.
  2. In a large skillet or wok, heat 1 tablespoon of sesame oil over medium heat.
  3. Add the sliced smoked sausage and sauté for about 5-7 minutes until browned and crispy.
  4. Introduce the minced garlic to the pan, stirring frequently until fragrant (about 1 minute).
  5. Push the sausage to one side of the pan and crack the eggs on the other side; scramble until fully cooked and mix everything together.
  6. Add the frozen mixed vegetables and stir well, cooking for another 3-4 minutes until heated through.
  7. Fold in the cooked rice along with the soy sauce, breaking up clumps as needed.
  8. Finish by mixing in the sliced green onions and seasoning with salt and pepper to taste.
  9. Serve warm, optionally topped with Sriracha for extra heat.

Notes

For the best texture, use day-old rice. Adjust seasonings to taste and feel free to customize with different vegetables.
